First try at a Grant loaf. Original recipe from Doris Grant in Your Daily Food (1944).
- 700 gr organic wholemeal bread flour
- 1 teaspoon salt
- 20 gr yeast
- 580 gr lukewarm water
- 1 teaspoon honey
1. (Mon 20:00) Warm the flour if needed (put for 10 sec in microwave or for a 2 minutes in an oven at 150 C). Mix the salt in the flour. Make a well in the flour; pour in some of the water; crumble the yeast in it and mix. Add the honey to the mixture.
Put in the remaining water and start to mix. The mixture will be too soft to knead, continue to mix with one hand for 2 minutes (hard work). Put in a greased tin, should be half filled.
Leave to rise until the dough reaches the top. Takes about 40 minutes depending on room temperature.
2. (Mon 20:45) Bake for 35 to 40 minutes in an oven at 200 C.
