Multi grain bread (Fri 10.12)

Straight bread based on a multigrain mix and half white bread flour.


  • 500 g white bread flour
  • 500 g multi grain mix
  • 2 teaspoons yeast
  • 42 g yeast
  • 640 g water

1. Mix flours and salt in a bowl.

Make a well in the flour add half of the water; crumble the yeast in the water. Start mixing the water with the flour. Add remaining water gradually while mixing.

Turn out on work surface and knead for 3 to 5 minutes.

Form into a ball and return to the bowl, leave to rise for 40 minutes.

2. When dough is about doubled in size turn out on table. Divide  into 2 equal parts and form into loaves.

Put on a greased tin and leave to rise for about 50 minutes.

3. Bake in a pre heated oven at 220 C for about 35 minutes.
