Cob (Mon 14.12)

A try-out with form (cob) and ingredients (flour types).


  • 250 g organic wholemeal flour (no strong bread flour but rather all-round pastry variety)
  • 250 white bread flour
  • 1 teaspoon salt
  • 30 g butter
  • 1 tablespoon honey
  • 20g yeast
  • 300 g water

1. Mix the flours and the salt.

Add the butter in dices and mix together. Crumble the yeast in the flour, add the honey.

Add water and start to mix.

Dough is quite sticky and soft.

Turn out on a work surface and knead for 3-5 minutes.

Leave to rise for 40 minutes.

2. Form into a ball, put on a greased tin.

Make a deep cross cut (should be the the cob form).

Leave to rise for 40 minutes.

3. Dough has risen and spread (a lot).

Bake in a pre-heated oven 220 C for 12 minutes. Lower temperature to 190 C and bake for another 20 minutes.
