Butter crisps (01.01).

New year butter crisps.


  • 250 g butter at room temp.
  • 250 g caster sugar
  • 125 demerara/cane sugar
  • 1 egg
  • 100 ml milk
  • 500 g pastry flour.

1. Beat the butter until pale and fluffy. add the sugar and continue beating (using an electric mixer will help a lot).

Add the egg, mix. Add the milk, mix. Add the flour (not all at once) and mix it in. The result is a soft creamy mixture.

2. You could leave the batter to rest for some time -even overnight- in the fridge.

When ready to bake make little balls of the dough and bake them in a wafer iron.
