Individual apple cakes in a pastry crust.
- 150 g pastry flour
- 1/3 teaspoon baking powder
- 80 g butter diced
- 60 g caster sugar
- 1 egg
- 3 large cooking apples
1. Mix flour and baking powser in a bowl. Add the diced butter; Rub the butter into the flour. Add the sugar.
Add the egg to the flour.
Knead (not too much more folding and pushing) into a ball.
Leave in the fridge for 30 minutes to an hour.
3. Cook the apples and leave to cool.
2. Roll out the dough (+- 5 mm thick). Cover the greased baking tins with the dough.
Fill with the cooked apples. Knead all remaining dough together and roll out again. Cover each baking tin with a lid made of dough. Pinch the border together.
Bake in a preheated oven at 180 C for 30-40 minutes.
Leave to cool in the tins for 10 minutes then unmould. (presented upside down here). Serve covered with icing sugar.
