Cinnamon sugar buns (Sat 20.03).

Cinnamon sugar buns. Intention was to make something else, but changed along the way. The buns are quite simple, but delicious.

Ingredients.

  • 500 g white bread flour
  • 1 teaspoon salt
  • 2 tablespoons cane sugar
  • 20 g butter diced
  • 20 g fresh yeast
  • 1 small egg
  • 250 g milk lukewarm
  • 1/2 teaspoon cinnamon
  • 40-50g butter
  • 100 g sugar nibs

1. Mix flour, salt and sugar in a bowl. Rub the  butter in the flour.

Crumble the yeast in the flour. Add most of the milk, the egg and start mixing.

Add the cinnamon (could also be added in the dry flour); Add additional milk if the dough seems too dry. Result should be a soft but not sticky dough. Turn out on working surface and knead for 2-3 minutes.


Leave to rise for about 1 hour.

2. Turn out on a floured surface.

Roll out in a rectangle about 0.5 cm thick. Melt the remaining butter and brush it over the dough rectangle.


Spread the sugar over the dough.

Roll the dough up tightly from one end. Cut into buns about 1.5 – 2 cm high.

Place the buns on a greased baking tin.
Leave to rise for about 1 hour.

3. Bake in a preheated oven at 200 C for 22 minutes, until light/golden brown.
Leave to cool on a wire rack.
